My Wife's Secret Corn Bread Recipe.

Heaven help me if she might see this!

Ingredients:

3 tablespoons vegetable oil

1 cup self-rising corn meal mix

3/4 cup buttermilk

1 egg

1 tablespoon Meadow Brook Farms Honey

1 tablespoon self-rising corn meal mix

10 to 25 pickled Jalapeno chips (optional)

Directions:

    (1) Preheat oven to 400 degrees F. In an 8 inch

Cast-iron skillet, heat vegetable oil over low heat.

    (2) In a medium bowl, mix together cornmeal, buttermilk,

egg and honey. Carefully stir in the hot oil. Sprinkle skillet

with remaining 1 tablespoon corn meal. Spoon mixture into

the skillet. Gently place Jalapeno chips on top of mixture.

    (3) Bake in preheated oven for 22 minutes until firm.

    Serve hot with fresh butter and honey

CHERRY ALMOND QUICK BREAD

Pre Heat oven to 350 degrees.

Approximate preparation cooking time is 90 minutes.

INGREDIENTS:

½ cup Sugar

½ cup Butter or Margarine

2 cups Flour

1 cup Buttermilk

½ cup Meadow Brook Farms Honey

2 Eggs

1 teaspoon Baking Soda

1 cup chopped Almonds

1 teaspoon Almond Extract

½ teaspoon Salt

1 6oz jar of Maraschino Cherries, chopped and drained.

In a large bowl cream sugar and butter. Add eggs, at

one time, beating well after each addition. Blend in extract.

Combine dry ingredients. Blend into a creamed mixture adding

the buttermilk slowly. Stir in the Almonds and Cherries.

Pour mixture into a greased and floured 9 X 5 X 3 inch loaf pan.

Bake at 350 degrees for 60 to 70 minutes, or until the loaf tests done

in the middle of the pan.

Remove from the baking pan and let cool on a wire rack.

HONEY PUMPKIN NUT BREAD

Preparation time aprox. 1 hour 40 minutes

Preheat oven to 325 degrees

Ingredients:

¾ cup Sugar

¼ teaspoon Baking Powder

½ teaspoon Ground Clove

¼ cup Water

½ cup Chopped Nuts (Pecans or Walnuts)

¾ cup Meadow Brook Farms Honey

1-1/2 teaspoons Baking Soda

½ teaspoon Cinnamon

1 cup Prepared Pumpkin (Canned Pumpkin Pie filling works well)

1-2/3 cup Flour

¾ teaspoon Salt

½ cup Salad Oil

2 Eggs

Preheat oven to 325 degrees.

Combine all of the ingredients, except the nuts, in a large mixing bowl.

Mix or stir until smooth, fold in the chopped nuts. Pour in to a greased

9 X 5 X 3-inch baking pan, and bake for 1 hour 20 minutes or until a tooth pick

inserted in the center pulls out clean. Cool on a wire rack for 15 minutes, then

turn out to cool completely.

 

MEADOW BROOK FARMS HONEY ROSTED NUTS

Preparation time: 15 minutes.

Ingredients:

3 cups Mixed Nuts or Dry Roasted Peanuts

2 tablespoons Butter or Margarine

½ teaspoon grated Orange Peel

½ cup Meadow Brook Farms Honey

½ teaspoon Cinnamon

Mix all ingredients in a Microwave safe (Glass) baking dish.

Microwave on high power for 4 to 7 minutes depending on your oven.

Let stand to cool for 5 to 10 minutes before serving.
